Chairman's Reserve Limited Edition 1931 is a tribute to the rum philosophy and craft established by our founder, Denis Barnard, when he established his distillery in 1931, which has become today one of Saint Lucia's most cherished treasures, St. Lucia Distillers.?

Appleton Estate Rare Casks 12 Year Old is a true expression of our Master Blender's craft and passion. The rare, golden rums that make up Rare Casks are hand-selected, and have all been aged for a minimum of 12 years. The long years of tropical ageing give it its rich mahogany hue, confident woody character, and smooth robust taste ? all of which make a bold statement of extraordinary quality.

Ak Zanj means ?With Angels,? a reference to the Angel's Share, the spirit stolen by thirsty angels each year, as the rum matures in barrels. Under the tropical weather of Haiti, the Angels are especially thirsty, and their share can be as high as 10 percent annually. The more they drink, the more mature and complex the rum.

TASTING NOTES

Appearance: Wearing an oak robe and sparkle

Nose: Floral notes & honey, followed by woody tannin and banana

Mouth: First comes a roundness and notes of caramel on the palate, combined with aromas of vanilla, followed by candied fruits, hazelnut and cinnamon

Finish: There remains a complex bouquet and balanced aromas of fruits, spice and long finish

In 1824, Dr. Johann Siegart, a German doctor serving as Surgeon-General of Simon Bolivar's army in Venezuela, was working to find a medicine that would enhance the appetite and digestive well-being of his soldiers. Dr. Siegart eventually settled upon a mix of herbs and spices that he called ?Amargo Aromatico? ? today, this world-famous concoction is known simply as Angostura Bitters.

Building on his early success, Dr. Siegart established the House of Angostura in the eponymous Venezuelan city, where he began to manufacture his bitters on a grander scale (the business would later become the sole purveyor of bitters to the King of Prussia, Spain, and King George V). As he continued to expand, Dr. Siegart, along with his younger brother and his son, moved the House of Angostura to Port of Spain, Trinidad in 1876 and began producing rum.

A marvelous anejo spirit made from a blend of light and heavy molasses-based rums aged for a minimum of 8 years in charred American oak bourbon barrels. Has lots of toasty flavor.

TASTING NOTES?

Appearance: Brilliant golden amber

Nose: Toasty sweet aromas of vanilla bean and elegant caramelized bouquet.

Mouth: Banana, vanilla, caramel

Finish: A rich aged rum for sweet palates enjoying a slow sipping session. Delightful.

Intense dark golden color with a nose of wonderful honeyed raisin fruit, spiced and vanilla. A complex palate of luscious sweet sultans fruit balanced with a toasty oak. Long finish to leave a lasting impression of the brilliance of great rum.

It is without question, column distillation transformed how rums throughout the Caribbean were produced in the 20th century. Some of the keynote advantages were centered around efficiency. The Aeneas Coffey twin column design became a popular choice for rum producers in the British West Indies. As demand for lighter and cheaper rum grew, some distilleries around the Caribbean added more plates and eventually more columns to make even lighter spirits with less congeners. Many rums today are distilled on multi-column stills with numerous plates making rums washed of any natural character. It is these rums that have contributed to some of the negative perception of column distillation of rum.

The column still at St. Lucia Distillers is a traditional twin column Coffey still commissioned in 1985. The Admiral Rodney rums have the fingerprint of Saint Lucian rum, which is a rum character unparalleled to any other fine aged rum. The rich flavor profile is undoubtedly from the brilliance of extracting pure rum on lower plates in the rectifier column with lower alcohol by volume. These are heavier bodied rums than most column distilled rums and deserve extended periods of aging in oak casks to fully evolve into the Saint Lucia's most prized liquid treasure.
